MARKET NOTE
Fully clad uncoated stainless is the relevant baseline for a sauté pan because sauce and braise cooking benefits from conductive material reaching the lower walls; ply count alone is not proof. The most honest value band is roughly US$95–180 (or local equivalent): Goldilocks, Heritage Steel, Tramontina and Anolon show that useful full-body cladding need not mean luxury pricing. Above roughly US$25

$140
Heritage Steel
Top pick — Broad 4-quart geometry and full five-ply cladding deliver fast, even heat; testing found it quicker than All-Clad D3 while matching its surface distribution.
$106
Copper-and-aluminum cladding gives this 30-centimeter pan quick, even heat into the walls; ergonomic twin handles offset the weight, but buyers should inspect the sealed rim for reported QC faults.
$99
Flush rivets make this 4.7-liter pan notably easier to clean; its fully bonded aluminum core, stay-cool main handle and helper grip form a practical large-format package.
$180
The responsive benchmark pairs a wide 9.25-inch base with fully bonded tri-ply; independent tests recorded efficient heat diffusion and forceful searing, though the concave handle divides users.
